The Swedish Table Cookbook
Minnesota Press | ISBN: 0816645132 | 216 pages | PDF | 7.5 MB | English

Swedish-born Henderson brings to American tables a refined and light version of traditional Swedish dishes. She makes an intense dish such as Jansson's Temptation less leaden by substituting smoked salmon for the usual anchovies, but she retains the cream that creates the dish's special character. Instead of pork shank, Henderson uses chicken and bacon to season her version of yellow pea soup, Sweden's national dish. Her Swedish pancakes lend themselves to both sweet and savory treatments, topping one with berries, the other with wild mushrooms. Her extensive treatment of yeast rolls shows the importance of pastry in Swedish cookery. No less compelling than her food is the story of Henderson's life. Daughter of a Swedish mother and a touring African American jazz musician, Henderson grew up cooking first for her family and then at a French bistro in her hometown of Lulea in Sweden's subarctic north. After a stint modeling in New York and Europe, she landed in Los Angeles, where she married and became a caterer to the Hollywood elite

Publisher: CRC; 1 edition (March 24, 200
Language: English
ISBN-10: 1420052748
ISBN-13: 978-1420052749
Product Dimensions: 9.3 x 6.2 x 0.8 inches

Product Description
Most baking books do not focus on the simultaneous heat and mass transfer that occurs in the baking process, thereby ignoring a fundamental facet of process and product development. Addressing the engineering and science elements often ignored in current baking books, Food Engineering Aspects of Baking Sweet Goods explores important topics in understanding the baking process and reviews recent technological advances.
With contributions from various international authorities on food science, engineering, and technology, the book covers the rheology of cake batter and cookie dough, cake emulsions, the physical and thermal properties of sweet goods, and heat and mass transfer during baking. It also presents the science of soft wheat products, including the quality of soft wheat, the functions of ingredients in the baking of sweet goods, and the chemical reactions during processing. In addition, the contributors discuss cake and cookie technologies as well as recent advances in baking soft wheat products. The final chapter examines the nutritional issues of consuming fats and sugars and presents general strategies for substituting fats and sugars in baked products.
Taking an engineering approach to the field, this volume delineates the complex food process of baking, from ingredients to production to finished product.

Product Description

Cookbooks
The definitive word on sumptuous Scandinavian cooking, now in paperback!
Drawing upon her rich knowledge of Scandinavian cuisine and culture, expert chef and veteran writer Beatrice Ojakangas presents a multitude of delicious yet remarkably simple recipes in this cookbook classic, available in paperback for the first time. Scandinavian Feasts features the cuisine of Denmark, Norway, Sweden, and Finland, and it includes menus made up of a bounty of appetizers, drinks, smorgasbord, meats, fish, soups, vegetables, desserts, and baked goods. Easily as engaging as the dishes themselves, each recipe comes with an introduction that explains the cultural importance of the feast and details its seasonal significance.
During the long, dark Scandinavian winter, the meals tend to be hearty and substantial. In Sweden and western Finland, a traditional Thursday lunch consists of a meal of pea soup and pancakes. A typical winter dinner might include Danish crackling roast pork with sugar-browned potatoes topped off with an irresistible ice cream cake. Christmastime gatherings, in particular, are often a chance to celebrate with a cup of hot glogg or Swedish punch. When the winter is finally over, the seemingly endless summer days are savored along with the fresh fruits and vegetables that are hard to find after the short growing season. During the white nights of Sweden and Norway, it is customary to serve a midnight supper after a concert or the theater, while a special occasion such as a baptism or anniversary might call for a feast of dill-stuffed whole salmon followed by kransekake, a beautiful towering ring cake of ground almonds.
No matter what your level of expertise as a cook or where you live, the recipes are easy to use. The ingredients commonly found in most grocery stores and a conversion chart for metric measurements is included. Scandinavian Feasts is sure to delight enthusiasts of Scandinavian culture and lovers of fine food everywhere.
Beatrice Ojakangas is the author of two dozen cookbooks, including The Great Scandinavian Baking Book (1999), also published by the University of Minnesota Press. Her articles have appeared in Bon Appétit, Gourmet, Cooking Light, Cuisine, and Redbook, and she has appeared on television's Baking with Julia Child and Martha Stewart's Living. She lives in Duluth, Minnesota.

Product Dimensions: 9.1 x 6.1 x 0.6 inches

Product Description

Childhood exists in all societies, though there is huge variation in the way it is socially constructed across time and place. Studying childhood historically greatly advances our understanding of what childhood is about and a world history focus permits some of the broadest questions to be asked.

In Childhood in World History Peter N. Stearns focuses on childhood in several ways:
· Childhood across change- the shift from hunting and gathering to an agricultural society and the impact of civilization and the emergence of major religions
· New and old debates about the distinctive features of Western childhood, including child labor
· The emergence of modern, industrial pattern of childhood in the West, Japan and communist societies, including a focus on education and economic dependence
· Globalization and the spread of child-centered consumerism
This historical perspective highlights the gains but also the divisions and losses for children across the millennia

Encyclopedia of Children and Childhood

In History and Society A-Z 3 VOL Set

By Paula S. Fass

25431.imgcache.jpg

  • Publisher: MacMillan Reference Books
  • Number Of Pages: 1055
  • Publication Date: 2003-10
  • Binding: Hardcover
From Booklist

Intended to provide "the interested reader with a necessary introduction to the wide range of issues that define the field" of children's history, the volumes of this encyclopedia draw on the expertise of more than 300 scholars from around the world for 445 articles arranged in alphabetical order. Among the contributors are authors of several important books written about the history of children over the past two decades, including Paula Petrick, who wrote Small Worlds: Children and Adolescents in America, 1850-1950 (Univ. of Kansas, 1992), and Joseph E. Illick, author of American Childhoods (Univ. of Pennsylvania, 2002).
Articles vary in length from 500 to 5,000 words and cover topics in such broad areas as history, social sciences, literature, medicine, and law as they relate to the history of childhood and children. Bicycles and tricycles; Cassatt, Mary; Charter schools; Child pornography; Halloween; Infant rulers; Islam; Lindbergh kidnapping; Montessori, Maria; Multiple births; Orphanages; Shyness; Teen drinking; Temple, Shirley; and Theories of play are examples of entries that demonstrate the set's range. The encyclopedia has discussions of literature that has been an important ingredient in the lives of Western children, such as the Bible, ABC books, fairy tales, Nancy Drew, Harry Potter, and comic books. Each entry ends with see also references and a bibliography. A wide variety of black-and-white illustrations, many of them significant representations of children in art, illustrate the text. Volume 3 contains an annotated collection of 50 primary sources identified as essential documents in the field, reproduced in whole or in part. A topical outline appears in volume 1, and volume 3 has an excellent comprehensive index.
Volumes in ABC-CLIO's the American Family series (Adolescence in America, Boyhood in America, Girlhood in America, Infancy in America [all 2001]) cover some of the same topics but are narrower in geographic scope. They are also more centered on the experience of children and youth rather than on childhood as an idea. The Gale Encyclopedia of Childhood and Adolescence (1997) is more concerned with child development. For its worldwide historical scope, Encyclopedia of Children and Childhood in History and Society is a recommended purchase for history collections as well as collections that focus on the study of children and children in families. It is also recommended in the broader sense as a great background tool for any public and academic library with patrons concerned with the study of topics relating to children. RBB
